Hello! In this video I will show you how to make the popular Jiro-style Ramen (二郎系ラーメン). Jiro-style ramen is a unique style of ramen sold at Ramen Jiro, a chain of shops founded by Takumi Yamada. Due to the huge popularity, there are now many other inspired shops that has opened all over Japan. Jiro-style ramen is well-known for large portions with a lot of vegetables and uses shoyu sauce, pork broth and pork fat to create strong distinctive flavours. It is so popular that there is a fan-base called Jirorian (ジロリアン) who tries to visit many different Jiro-style ramen shops to try the various recipes. In my recipe, I try to create my own version using no MSG (as always) but a variety of ingredients to bring out the powerful flavours that makes Jiro-style ramen. I also maintain the speciality of Jiro-style ramen, using a lot of vegetables, pork broth & pork fat, as well as thick noodles. RAMEN JIRO in Shinjuku: Ramen with a Cult Following


You can't talk about ramen in Tokyo without talking Ramen Jiro. This tonkotsu ramen place is dividing the ramen community in Jiro lovers and Jiro haters. Jiro has an almost cult like following called Jirorians (ジロリアン) with websites and facebook groups dedicated to sharing everything that is to know about Jiro-kei ramen. Of course, make sure to check out Cody's ramen review website Ramen Guide Japan: ► 🤍 Some things to consider when you go and eat at a Jiro Ramen place, doesn't matter if it is in Shinjuku or not. There are some unspoken rules and ways how to order. First off, you should know that you can't order any drinks at most (all?) Ramen Jiro's. If you want to drink something other than water, you should bring your own drink or buy an oolong tea from the vending machine, which you will find in front of the store. Normally, you will find a line in front of the stores. Buy a ticket, once you are within the next 5-10 people to be seated. Usually you will see when the person in front of you gets a ticket, after that it is your turn. In this Ramen Jiro in Shinjuku specifically, you should be aware that you need to take your own water glass and spoon BEFORE you sit down. Once it is your turn to sit down, hand over your ticket to the ramen chef. They will start with the preparation and get back to you, once they reach the moment to put toppings on the bowl. That's when you will get asked "ninniku wa?" The Ramen Jiro you probably will never go to - Ramen Jiro in Fukushima's Aizuwakamatsu city


Ramen Jiro is the legendary ramen shop which has created dozens of offshoots all over Japan under the Ramen Jiro brand, all selling the same style of ramen but with their own twist. While most Jiro shops are centered around Tokyo in the Kanto area, there are a few outside. There might be shops that are even further away from the Ramen Jiro main store, like the one in Sapporo. But none are more "off the beaten path" than the one in Aizuwakamatsu city in Fukushima prefecture. There isn't much of touristic value in Aizuwakamatsu, especially for international travellers. The most interesting thing might be that it is next door to Kitakata city, which is a true ramen paradise. So if you are on the way there, make sure to add this Ramen Jiro to your list for bragging rights, since this one is probably the most common to have missing on the scorecard. Some noteworthy things about the Aizuwakamatsu location are the quite large number of toppings that you can add via the vending machine in addition to the standard free Jiro toppings garlic, pork back fat, extra seasoning and more veggies. The vending machine toppings include things like raw garlic, "gyofun" dried fish powder, quail eggs and some other stuff. There's also an option to get shrimp tsukemen, which is a quite unique menu item for a Jiro store. For Jiro ramen, the bowl was overall above average for me. The gyofun was a great addition and really pushed it a bit into a new direction compared to other Jiro bowls I had before. The soup itself wasn't as heavy and dotted with pork back fat as I would have liked, but still had enough richness to satisfy. The noodles were good Jiro average (which means great). Overall not a super surprising bowl, but very solid and enjoyable. If you are in the area anyway, make a stop here. Otherwise, only the most die hard Jirorians will find their way up here. The FATTIEST RAMEN in Tokyo? - Jiro Ramen Mita Honten


We went to a Tokyo ramen staple: The famous Ramen Jiro! Please not that Ramen Jiro has nothing to do with the famous Jiro Sushi. Completely different, I am glad we got that clarified. Find more ramen reviews on 🤍 Jiro Ramen is a very special kind of ramen. Technically, it is a tonkotsu broth with shoyu added. But it is definitely completely different than any other tonkotsu ramen you ever had. It has lots of suspended fat in the soup and you can even ask for additional bits and pieces of fat to be added on top of your ramen. If you let the ramen sit for a while, the fat will slowly gather at the top of your soup and create a roughly thumb-thick film of fat that covers the whole bowl. It may well be the fattiest ramen you will ever eat it your life. But that is not all. Even with the regular option you will receive huge chunks of pork meat (chashu) that are best described as half meat and half fat. Apparently they are using tenderloin, but often you will have no idea from what part of the pig this chunky piece of fatty deliciousness came from. To top it all off, you will receive a generous heap of cut Chinese cabbage (hakusai) and bean sprouts (moyashi). And let’s not forget about the more thand handful of garlic that will be nicely added on top of your bowl, a bit to the side of the hakusai-moyashi tower. The noodles deserve a whole video for themselves. They are thick, handmade Jiro Ramen opened in 1968 and has since then developed a cult following among ramen lovers. There are over 30 Jiro Ramen locations, mainly in Tokyo, but with a few locations around Tokyo as well, like Yokohama and Chiba. The store in the video is the original store, called Mita Hon Ten 三田本店. It is not the one where the Jiro story started, they moved into this building in 1996. Legend has it that you have to work at this store first before you are allowed to open your own Ramen Jiro. While all Jiro Ramen locations have a bit of their own style, the main recipe and idea stays the same. Please don’t let the cleanliness (or lack of it) deter you from giving it a go. You will feel like you are covered in grease anyway, once you take your first couple of bites, so it does not matter that much. As of making of this video, the regular ramen was only 600 Yen, and already provided a just barely edible size for normal people. If you are not used to the Jiro Ramen size, this is what you want to order. For 100 Yen extra you can add more meat to your bowl and for 200 Yen extra, you can actually double the amount of meat, which is ridiculous (-ly awesome!). You can also get a bigger bowl for more ramen storage capabilities for little money extra and of course you also have the options to add extra meat to that as well. Unless you are someone of the size of Dway “The Rock” Johnson or a professional Sumo wrestler, I do not recommend going for any of the bigger options. You WILL regret it. If all that was not enough, you can get additional free toppings with these magical words: Free Toppings: Ninniku (Garlic) Ninniku Mashi (Extra garlic) Ninnniku Mashi Mashi (Double extra garlic) Ninniku Sukuname (just a little bit of garlic) Yasai Mashi (Extra vegetables) Yasai Mashi Mashi (Double extra vegetables) Yasai Nashi (no vegetables) Abura Mashi (Extra fat) Abura Mashi Mashi (Double extra fat) Karame (Extra soy sauce) I highly recommend getting at least the Ninniku or Ninnuku Sukuname options, as the garlic REALLY enhances the flavor a lot. Plus you won’t have to defend yourselves from Japanese girls and guys throwing themselves at your at least for one evening, with that magic garlic breath. Instead of them waiting for you to tell them about your garlic preferences, they might ask you directly. So if you hear “something something NINNIKU” you simply nod and say “HAI!”. Ramen Jiro Kyoto - the biggest bowl of ramen in Kyoto!


Ramen Jiro Kyoto is the Kyoto home of the famed and often ultra sized Jiro style ramen. A mountain of veggies, pieces of pork with the size of a fist and a heaped tablespoon of fresh garlic sit on top of a heavy and strongly seasoned tonkotsu soup, which houses a generous portion of thick and chewy noodles . Originally a cheap and filling meal for students studying at Keio university near Mita station in Tokyo, it has generated a fanatic following of Jiro style ramen lovers that isn’t comparable to any other ramen style. Calling themselves “Jirorians”, they travel from Jiro shop to Jiro shop like religious people to temples or churches, in the hope to one day have eaten at all of the Jiro locations. While most of the locations are in and around Tokyo, this is one of the more “out of the way” locations and one of the few Ramen Jiro outside of Tokyo’s greater metropolitan area. I’ve already had been at the famed “most remote” location in Aizuwakamatsu in Fukushima prefecture, so I thought “why not continue my run?” and went for a bowl in Kyoto as well. The Jiro Ramen shop in Kyoto is famous for two things: It’s the only one that does not have the instantly recognizable yellow Ramen Jiro (ラーメン二郎) sign out front. Instead, like many signs in Kyoto, it has a more subdued white design. The second thing that the local kujo negi is available to order via the ticket machine for 60 Yen per small cup. Kujo negi (九条ネギ) is a Japan wide known variant of green onion, which is known for being very aromatic and flavorful while not being “harsh” in an oniony sense. It is probably the best negi to eat raw and always a treat when combined with ramen. Having the ability here to add it to a Jiro ramen bowl was something I could not pass on. Therefore I reduced the amount of veggies on my bowl (yasai sukuname) and went for 2 cups of negi. You get those served on the side, so you can decide when to add them. Overall Ramen Jiro in Kyoto was a great experience that I would love to repeat one day. If you’re a ramen lover and have a craving for ramen noodles while in Kyoto, give this ramen shop a try. Great Jiro Style Ramen at Butakaze


Butakaze is a new Jiro style ramen shop right next to Hatanodai station in Tokyo. Opened by a disciple of the famous Butaboshi, their shops show many similarities, from offered bowls to available additional paid and free toppings. The ramen served at Butakaze is a heavy and rich tonkotsu, which is seasoned with lots of soy sauce based tare, 80ml to be precise, as I saw them ladle it in. As a comparison, a regular ramen bowl has only around 30ml of tare. In addition to that, they ladle in around 60ml of lard into the already rich tonkotsu soup. All in all, a rather filling bowl of ramen. On top of the soup, you will get 2 plump pieces of tender meat which easily clocks in with around 200 grams, roughly 7 ounces or so if I had to guess. The meat is covered by a hefty serving of sprouts and cabbage, although the sprouts definitely dominate. When asked "ninniku iremasu ka?" you can add pork back fat, garlic, more seasoning and chili flakes for free. On the ticket machine you will find additional toppings like raw egg, quail eggs, nori, raw ginger, gyofun fish powder, cheese and curry. Looking further on the ticket machine, you will find the first 2 rows filled with all the varieties that they offer. Starting with their "mini ramen", which I had in the video (not mini at all!). Next one is their sho "small ramen", which is already quite a big portion. You can add additional noodles via the oomori button in the third row. Next up are the karamen spicy bowl, the shirunashi soupless bowl, tsukemen, Taiwan ramen and shio ramen. An incredible variety for a Jiro style ramen spot, which often only serve exactly one bowl, just in varied sizes. After buying the ticket, the waiting line is along the wall, which is indicated on several signs. You will be assigned a seat by the staff, don't just sit down by yourself. The staff aren't the friendliest bunch, which also explains their low score on Google Maps. Pay attention and follow the instructions, and you will do fine. If you don't know what to say when asked for the free toppings, just say "ninniku abura karame" and get a bowl of lardy happiness. I can also recommend the raw ginger topping, which you can get on the machine. Butaboshi in Kanagawa: Better Jiro style ramen than at Ramen Jiro?!?


Butaboshi serves one of the top Jiro style ramen bowls in Kanagawa and arguably the best outside of a Ramen Jiro shop. Butaboshi translates to "pork star", so you already know what to expect here. In your face porkiness with a punchy msg heavy flavor, lots of fat and thick noodles topped with a bunch of sprouts. But Butaboshi is way more than just that. They have made themselves known for offering a lot of modifications and toppings unavailable at other shops. They serve their ramen in 4 different forms: as regular ramen, tsukemen, spicy ramen and shirunashi. All 4 bowls have different ways of modifying them before getting handed to you. Those modifications are listed above the counter, so you don't have to scour the internet to find out what these are. Let's make this clear though, this isn't a beginner shop, where you can expect the staff to take you by the hand and explain everything calmly to you. During my visit, I have seen the staff tell two groups to STFU. They also don't display a lot of patience for people not reacting fast to their call up to modify their bowls. Briefly explaining the process of eating here: Get in line outside of Butaboshi until you reach the vending machine. Get your ticket, I recommend getting the ミニラーメン which is around 250 grams of noodles and the ショウガ ginger topping. Then you wait at the wall to your right. The ramen are served in batches of around 6 people, one of the staff will signal to the first waiting person when to sit down. If everyone in front of you sat down and there is still an open chair, you can probably sit down too. Look at the number in front of you, it will be called out together with what you have ordered, so listen for "miniramen" and "shouga" and your number. Pay attention, they might not speak very loud or even look at you, it's your job to figure out when you are being asked. Now is the time to modify your bowl. I recommend yelling "ninniku abura karame" to get raw garlic, extra pork back fat and some extra tare splashed on top. That's it, now you will receive your bowl. Make sure you eat quickly, since you are going to hold up the next batch, if everyone around you is already done and people here eat FAST. If you are super super slow, you might get your bowl taken away, although I haven't seen this myself. Tiny ramen shop serving Jiro style ramen: Small Axe in Oimachi


Small Axe (スモールアックス) is a tiny ramen shop in the drinking alley right next to Oimachi station, serving Jiro style tonkotsu ramen with thick noodles and a rich shoyu seasoning. Walking into the shop, you immediately see the vending machine to your left, which doesn’t give you a ton of options. Ramen comes in one size, which is a very generous portion already in terms of noodles, so don’t worry that you will leave hungry. Additional paid toppings are extra meat, boiled or raw eggs and gyofun fish powder. There’s also Indonesian Bintang beer on the menu, which is a rare find in Japan. After getting all the desired tickets from the machine, you put them down on the counter at one of the 6 available seats. Yea, the Small Axe is really this small! Once you sit down, you will find ladles, chopsticks, additional seasoning tare, as well as black and white pepper just above your head in a small shelf. When you get your bowl, you have a chance to get additional toppings or modify your bowl. Free toppings include garlic, more veggies and pork back fat. You can also order more tare, but there’s some signs around the shop discouraging that, since the tare is quite strong and you can add it yourself from the counter, if you really want. The bowl itself is a hefty bowl of tonkotsu, without a lot of emulsification. So don’t expect something like the white and creamy Hakata style tonkotsu. After the ramen master adds 80ml of his rich and salty soy sauce based tare, he makes pork back fat rain over the bowls, which he freshly pulls out of the huge broth pot. The noodles are medium thick for Jiro style noodles and of course quite fat when compared to most other styles of ramen. Two slices of chashu get added when no additional pork is ordered. I feel like an additional chashu order is a good recommendation, so get that for 200 Yen from the machine. Be aware that the owner of Small Axe values the silence of his customers. So beyond saying what you want in your bowl and saying “gochisosama” after your meal, maybe keep conversations outside or at least to a minimum. Oimachi itself is also a great area to go out before or after your meal at Small Axe. Lots of good restaurants, bars and other ramen shops are all around Oimachi station.
